Great wine producers utilize
every tool and technique at their disposal when it comes to
turning grapes into wine. Spyglass Ridges’ wine maker
Tom Webb is no exception.
First of all, he trusts his
senses. The feel of the berry in his fingers, the flavor of
the fruit, the smells of the fermentation process, and finally
the taste of the wine as it evolves.
Tom also experiments with
different techniques– a different yeast, a better pump
over technique, a gentler way to handle fruit, or a more reliable
method of measuring extractable color and character.
